Ingredients
- 2 cups dried, broken hominy
- 1 cup dried beans
- 1 cup dried chickpeas
- 3⁄4 cup olive oil
- 1 1⁄2 tsp. sweet paprika
- 8 cloves garlic, minced
- 1 lb. pork shoulder, cut into 1" pieces
- 10 oz. cured chorizo, cut into 1/2" slices
- 1 large yellow onion, minced
- 1 tbsp. tomato paste
- 1 tsp. dried oregano
- 1⁄2 tsp. ground cumin
- 1 bay leaf
- Juice of 1 lemon
- 1 cup finely chopped scallions
Empanadas
INGREDIENTS
- 3 Tbsp. extra-virgin olive oil, divided
- 2 lb. ground beef (20% fat)
- 2 medium onions, chopped
- 2 small red bell peppers, seeded, chopped
- 3 Tbsp. ground cumin
- 2 Tbsp. sweet paprika
- 1 Tbsp. dried oregano
- ¼ tsp. cayenne pepper
- 3 packages (12 each) Puff Pastry Dough
- ½ cup pitted green olives (Picholine or Spanish), rinsed well, cut in half lengthwise
